Radler and D.A.S.
D.A.S. ist gut! We hear Chicago will—finally—be getting some sorely needed German food relief. Nathan Sears, Paul Virant’s chef de cuisine at Michelin-starred Vie in Western Springs, will partner with Vie alum Adam Herbert to helm Radler and D.A.S., a “restaurant-within-a-restaurant,” set to be located in either Logan Square or Lincoln Park. Radler, which means “cyclist” in German, will be styled like a Bavarian beer hall, complete with communal seating and the pub-like fare we’d expect. But this brew hall will be different: it will house a separate eatery, D.A.S, where there will be two prix-fixé dinner seatings each night, Thursday through Saturday. We hope to be saying “prosit!” there by Oktoberfest season.
