If you want a full and flavorful pour-over, Gaslight’s your place. We recommend the Ethiopian Yirgacheffe. The food menu includes charcuterie pairings (pickled vegetables, strong cheeses and mustards), pastries, incredible sandwiches and breakfast plates. Gaslight claims to be concerned with aesthetic, and here it’s decidedly “hipster”—the walls bear taxidermy for the sake of bearing taxidermy, the surfaces are all reclaimed wood, and the baristas are identical in their flannel, suspenders and facial hair styles. Fans of “Portlandia” will recall the show’s riffs on pickling, well, everything, and skits such as “The Dream of the 1890s is Alive in Portland.” While sharing a charcuterie plate with a friend one blustery afternoon last winter, we asked the barista to explain the pairings. This launched a passionate five-minute explanation of whatever pickled vegetable was on the plate, and his future plans for making mustards in house. Comedic, sure, but Gaslight is passionate about what they do, and they do it well.
