The trio of smoked sashimi at Juno
Applewood smoked bacon is commonplace, but applewood smoked sashimi? The fish arrives encased in a glass dome filled with applewood smoke. Heads from neighboring tables will turn as the dome lifts and a smoky scent wafts across the room. It’s not just show though. Somehow the smokiness imparts a depth to the raw fish that is utterly delicious. We love the hamachi with shiitake mushrooms, dehydrated sweet corn and micro arugula.
