After spending several weeks in Paris learning pastry secrets from Pierre Hermé, the Sofitel’s Leigh Omilinsky makes the best classic French pastries in town, as evidenced by her Parisian patisserie-inspired dessert cart at Café des Architectes. Omilinsky, this year’s Jean Banchet Best Pastry Chef, shows off the versatility of pâte à choux not only in éclairs and cream puffs, but sandwiching a sweet and salty hazelnut praline cream. Paris Brest may be a mess to eat, but it’s worth the sticky fingers.
