Is this your first Lolla? If not, how many years have you been here?
We are veterans from the first year Lolla opened the Farmers Market, so this will be our sixth year.
What will we find at your Lollapalooza booth?
We will be offering Queijo de Coalho, a Brazilian-style grilled cheese on a stick. We make the cheese at our creamery in Wisconsin, skewer and sear it over a flame, serve it on a stick. The most popular is our Smoked Bacon Queijo de Coalho, drizzled with pineapple chipotle syrup. We will also be adding some caprese salads to our offerings this year.
Where are you from, what do you do, and how long have you been doing it?
We are Wisconsin artisanal cheesemakers located in the rolling hills of rural Darlington in Southwest Wisconsin. We make cheese by hand in small batches and have done so since 1899.
How green are you?
We are a small sustainable creamery that leave nothing to waste: when we bring in a load of milk: we craft cheese from the milk solids (curd), churn butter from the cream, and sell the whey for protein.
What do you plan to be doing in the year 2050?
In the year 2050, we will be opening a satellite creamery on the planet Druidia.
What band(s) are you hoping to sneak away from your booth to see?
If I’m lucky enough to sneak out to catch a band, it will be to see First Aid Kit.

Is this your first Lolla? If not, how many years have you been here?
This is our third Lolla.
What will we find at your Lollapalooza booth?
French baked goods and crepes! French beignets, crepes, specialty baguettes with pepperonis or ham-and-cheese croissants.
Where are you from, what do you do, and how long have you been doing it?
We are a French bakery based in Chicago, we make French bread wholesale but we also have a retail shop of French bread and French pastries.
How green are you?
We try to be as green as possible for preserving the environment and also waste. Being green is also saving on cost. We recycle everything we can in the commissary kitchen, we reuse flour bags to deliver to clients and try not to use packaging at all as much as possible.
What do you plan to be doing in the year 2050?
Retired in the Fiji islands
What band(s) are you hoping to sneak away from your booth to see?
Probably the headliners, Paul McCartney, Metallica

This will be our fourth year in the Farmers Market.
What will we find at your Lollapalooza booth?
Both bestsellers and some new savory, sweet ice cream, vegan and gluten-free Puffs. Vegetarians should make sure to stop by to check out our brand new savory vegetarian option: Spinach Artichoke. And of course, our Lollapalooza fan favorites the Salted Caramel Chocolate Puff, Bacon Ranch Mac & Cheese Puff, and the Bourbon BBQ Pulled Pork Puff will be on the menu. We will also be launching our BRAND NEW Boozy Lollipops in fun flavors like PBR, Bourbon and more. This year’s menu is bigger, better and more bada$$ than ever before.
Where are you from, what do you do, and how long have you been doing it?
We make Puffs. We sell Puffs. We eat pieces of Puffs like you for breakfast. Since 2011. Puffs of Doom is proudly from Chicago.
How green are you?
As the wise philosopher Kermit said, “It isn’t easy being green”… however we try our best by using recycled, compostable eco packaging/utensils and sourcing as many ingredients as possible from local producers. Equally important is collaborating with as many local farmers and small artisan food companies. If we don’t individually make the changes necessary to save our environment, who will?
What do you plan to be doing in the year 2050?
Ms. Doom will be rocking some purple hair, an age-inappropriate outfit, and yelling at teenagers to get off her lawn. Mr. Doom’s ghost will be haunting said teenager’s houses.
What band(s) are you hoping to sneak away from your booth to see?
We don’t often get to go to shows, but if we can—Paul McCartney, Metallica, Elle King and Jamestown Revival.

Where are you from, what do you do, and how long have you been doing it?
We are third-generation street-food vendors from Chicago via Thailand. We make delicious farm to booth Asian Street Food offering great vegan- and gluten-free options.
How green are you?
We try to be as green as possible because we care about our planet and how we leave it for our children.
What do you plan to be doing in the year 2050?
Still working on planning for this week!

This is Seedling’s fifth year doing Lolla.
What will we find at your Lollapalooza booth?
We sell fruit smoothies—strawberry and blueberry (and of course, combos), with an optional green-tea energy boost shot. We also sell individual pieces of fruit and party bags of fruit for groups.
Where are you from, what do you do, and how long have you been doing it?
Seedling is located in South Haven, Michigan. We are a fruit farm and orchard with a solar-powered cider mill on the premises—our smoothies are made from fruit from the farm, along with our farm-pressed apple cider—been doing it for over a decade.
How green are you?
Cider mill is solar-powered, and we’ll even have our smoothie bike: a custom bike with a blender attached where customers can blend their smoothies using their very own leg power.
What band(s) are you hoping to sneak away from your booth to see?
We’re fans of every type of music at Seedling, but some staff will be running to catch Kid Cudi, Gary Clark Jr., Of Monsters and Men, Florence + the Machine, TV on the Radio, and everything in between.

This is our second year at Lolla!
What will we find at your Lollapalooza booth?
At our booth you will find a variety of handcrafted, locally sourced ice cream and frozen yogurt and for those of you who do not like dairy we will have a dairy-free/vegan sorbet! This year we will have two specialty items: One you can drink and one you can lick: Stop by and check them out!
Where are you from, what do you do, and how long have you been doing it?
We are from Chicago! All year long you can find us at our shop in Lincoln Park, where we hand-craft all of our ice cream and frozen yogurt using locally sourced ingredients. We have been making small batches of happiness for the past nine years.
How green are you?
We source our milk and cream from cows that are pasture raised in Illinois. The majority of our fruit and vegetables are from local, family farms. As a company we try to limit our carbon foot print by using compostable cups, spoons and paper goods.
What do you plan to be doing in the year 2050?
We plan to be on a beach relaxing…with a freezer full of our frozen yogurt and ice cream!

If we can sneak away from our booth we would love to see Paul McCartney, Walk The Moon,…Alesso.
