Crab Rangoon is not Asian (it seems to have been spawned at Trader Vic’s), but it’s served at Thai, Chinese and sometimes Japanese restaurants, probably because gringos expect it. It usually contains cream cheese, which is odd, as many Asians suffer from lactose intolerance, including Bill Kim, who confesses “I’m allergic to dairy; I don’t even like the taste of it.” At bellyQ, he does his version with whipped tofu instead of cheese, and high-quality Jonah crab instead of krab. He also adds fish sauce. It’s not the “authentic” faux Asian creation; it’s way better.
