Old Jerusalem
The little lentil, so packed with protein and general goodness, has been part of the human diet for at least 9,500 years. How fitting then, that Chicago’s best lentil soup is served at Old Jerusalem, since that city is one of civilization’s most ancient, considered holy by three major religions. This soup, made of orange lentils that dissolve into a blend of onions and rice, is suffused with lemon and served with a lemon wedge.
