From the get-go—actually, from even before the get-go, during the concept phase—chef/artist/genius Grant Achatz said he wanted a place that would be noisy, boisterous and casual to the point of messiness…everything his landmark Alinea is not. Thus was born Roister, another collaboration with his partner Nick Kokonas. Wooden tables flank the open kitchen, the volume on the sound system (with crowd-sourced playlist) is cranked to O’Hare levels and people strain their vocal chords to be heard, giving you a perfect opportunity to practice Ameslan.
