The rainbow and unicorn craze hit a peak this year, but when River North, Fulton Market and Streeterville brunch spot Beatrix lists “rainbow toast” on the menu, they don’t mean it’s sprinkled with artificial flavors or red 40. They take a hunk of toast and smear it with house-made ricotta, then layer it with colorful berries, such as blackberries, chopped peaches and sliced strawberries. The end result looks more like an edible flag than something a child created. Plus, it’s actually good for you.
