It’s no wonder Bon Appétit named Elske the second best new restaurant in America 2017. Married couple David and Anna Posey—he, the longtime chef de cuisine at Blackbird, and she, the former executive pastry chef at The Publican—opened the West Loop restaurant at the end of last year. David’s family is Danish, and their spot is cozy and warm from an outdoor fireplace. They serve things like gjetost (a thick goat cheese) and the Greek-inspired purée, walnut skordalia. Despite its Scandinavian namesake—Elske translates to “love”—it’s also influenced by local ingredients. Serviceberries, for their cocktails, grow onsite, and seasonal vegetables arrive from local farmers.
